Creamy Bacon Cheddar Loaded Baked Potato Salad

  1. In a large pot, cover potatoes with cold water and bring to a boil.
  2. Boil for 20-30 minutes, until fork tender.
  3. Strain potatoes and set aside to cool.
  4. In a medium bowl, whisk together mayo, sour cream, dressing mix and milk.
  5. Add cheese, bacon bits, green onions and stir.
  6. PEEL the skin off the potatoes and cut into 1/2 inch cubes.
  7. Add potatoes to the dressing mix and gently stir until combined.
