Chicken with Curry-Oyster Sauce

  1. Slice the garlic and remove the core.
  2. Cut the chicken into bite-sized pieces and marinate with 1 tablespoon of sake.
  3. Put the plain flour and curry powder into a plastic bag and shake to mix evenly.
  4. Then add chicken chunks and shake to coat.
  5. Heat the sesame oil in a frying pan and add sliced garlic.
  6. Fry over medium heat until fragrant, then add chicken chunks skin side down and cook for about 6 minutes.
  7. Move the sliced garlic to the side, and if the garlic starts burning, take out and set aside.
  8. Turn chicken chunks over and cook another 5-6 minutes to cook through.
  9. Remove any excess oil with kitchen paper and add the sauce.
  10. Cook over high heat and coat the chicken with the sauce.
