Peppermint Pinwheel Recipe
- 1 c. soft shortening (half butter)
- 1 c. sifted confectioners' sugar
- 1 egg
- 1 1/2 teaspoon almond flavoring
- 1 teaspoon vanilla
- 2 1/2 c. sifted flour
- 1 teaspoon salt
- 1/2 teaspoon red food coloring
- 1/4 c. finely crushed peppermint stick candy, if you like
- 1/4 c. sugar, if you like
- Mix shortening, sugar, egg, flavorings.
- Mix flour and salt; blend in thoroughly.
- Divide dough in half.
- Blend red food coloring into one half.
- Refrigeratedough till hard.
- On lightly floured cloth-covered board, roll light half into a 12-inch square.
- Roll red half same size and lay on top of light dough.
- Roll double layer of dough gently till 3/16 inch thick.
- Roll up tightly as for jelly roll.
- Refrigerate1 hour.
- Heat oven to 375 degrees, quick moderate.
- Slice 1/8 inch thick.
- Place on ungreased baking sheet and bake 9 min or possibly till lightly browned.
- While still hot, brush with Egg White Glaze (recipe below) and sprinkle with mix of candy and sugar.
- Makes 6 to 7 dozen.
