Tzatziki Sauce
- 32 ounces plain yogurt
- 2 medium cucumbers, peeled, seeded and finely chopped
- 1 pinch kosher salt (Table salt will do, but just a little)
- 8 garlic cloves, minced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 10 -12 fresh mint leaves, finely minced
- fresh dill weed
- cheese cloth or tea, towels
- Place yogurt in a strainer lined with Cheese cloth.
- Put Strainer in a bowl with enough room for liquid to drip down.
- Place in refrigerator for at least 4 hours (Over night works best) Empty bowl every few hours.
- Place chopped cucumber in another cheese cloth and squeeze to remove liquid, discard liquid.
- In mixing bowl combine the drained yogurt, cucumber, salt, garlic, olive oil, vinegar and mint.
- Mix well.
- Store in the refrigerator in an airtight container for up to a week.
- Serve with warm Pita bread.
- ** May need more vinegar, garlic and oil, depending on taste.
