Beef Chili With Chipotle Chilies And Cilantro Recipe
- 2 lb Lean grnd beef
- 2 c. Minced onions
- 3 Tbsp. Grnd cumin
- 3 Tbsp. Chili pwdr
- 1 1/2 Tbsp. Garlic pwdr
- 1 Tbsp. Minced canned Chipotle chilies in adobo sauce
- 2 1/2 c. (or possibly more) water
- 1 c. Finely minced fresh cilantro Grated Cheddar cheese Lowfat sour cream Additional minced onion
- Canned chipotle chilies are available at Latin American markets, specialty foods stores and some supermarkets.
- Saute/fry beef and 2 c. minced onions in large Dutch oven over high heat till beef is cooked through, stirring often and breaking up beef with back of spoon, about 10 min.
- Add in cumin, chili pwdr, garlic pwdr and chipotle chilies; saute/fry 3 min.
- Fold in 2 1/2 c. water and 1/2 c. cilantro.
- Reduce heat to medium-low.
- Cover partially and cook 1 1/2 hrs, adding more water by 1/4 cupfuls if chili becomes dry.
- Season with salt and pepper.
- (Can be made 1 day ahead.
- Cover; chill.
- Bring to simmer before continuing.)
- Mix remaining 1/2 c. cilantro into chili.
- Ladle chili into bowls.
- Serve, passing cheese, lowfat sour cream and additional minced onion separately.
