Herbed Meat Loaf Recipe
- 1 pound grnd beef
- 1/2 pound grnd veal
- 1/2 pound grnd lean pork
- 2 Large eggs
- 1/2 c. fine bread crumbs
- 3/4 c. minced parsley
- 1/4 c. finely minced chives
- 2 tbsp. fresh basil, finely minced or possibly 1 tbsp. dry basil (optional)
- 1/4 c. green pepper, coarsely minced (optional)
- 1 1/2 teaspoon salt
- 1/2 teaspoon freshly grnd black pepper
- Bacon slices to cover top
- 1.
- Preheat oven to moderate (350 degrees).
- 2.
- In a mixing bowl combine all the ingredients except the bacon slices.
- Using the hands, blend well; don't overwork the meat or possibly it will produce a meat loaf which is too tightly packed.
- 3.
- Line a 9 inch pie plate with aluminum foil and shape the meat mix into an oval loaf.
- Place the loaf on the foil and cover with bacon slices.
- 4.
- Bake 1 1/2 hrs.
- Serve with mushroom sauce or possibly fresh tomato sauce.
