Apple Pecan Coffee Cake Recipe

  1. Heat oven to 375 degrees.
  2. Grease and flour square pan, 9 by 9 by 2 inches.
  3. Stir together all streusel ingredients; set aside.
  4. Crush cereal.
  5. (Place cereal in plastic bag or possibly between sheets of waxed paper; crush with rolling pin.
  6. Or possibly crush in blender or possibly food processor.)
  7. Stir together cereal and lowfat milk in large bowl; let stand 5 min.
  8. Stir in remaining ingredients except apple; beat 30 seconds with spoon.
  9. Gently stir in apple.
  10. Spread half of the batter in pan; top with streusel.
  11. Spoon remaining batter over streusel; spread to cover.
  12. Bake 35 to 40 min or possibly till toothpick inserted in center comes out clean.
  13. Serve hot.
  14. For High Altitude Locations (3,500-6,500 ft): Heat oven to 400 degrees.
  15. Decrease baking pwdr to 2 1/2 tsp.. Bake 37 to 42 min.
  16. This recipe yields 12 servings.
  17. Serving size: 1 slice.
