Apple Pecan Coffee Cake Recipe
- 1 c. Fiber One cereal
- 1 c. lowfat milk
- 1 3/4 c. Gold Medal all-purpose flour
- 2/3 c. sugar
- 1/4 c. vegetable oil
- 3 tsp baking pwdr
- 1/2 tsp salt
- 4 x egg whites (or possibly 2 Large eggs)
- 1 med all-purpose apple pared, minced
- 1/2 c. coarsely-minced pecans
- 1/4 c. hard margarine or possibly butter
- 3 Tbsp. brown sugar - (packed)
- 2 Tbsp. Gold Medal all-purpose flour
- 1/2 tsp grnd cinnamon
- Heat oven to 375 degrees.
- Grease and flour square pan, 9 by 9 by 2 inches.
- Stir together all streusel ingredients; set aside.
- Crush cereal.
- (Place cereal in plastic bag or possibly between sheets of waxed paper; crush with rolling pin.
- Or possibly crush in blender or possibly food processor.)
- Stir together cereal and lowfat milk in large bowl; let stand 5 min.
- Stir in remaining ingredients except apple; beat 30 seconds with spoon.
- Gently stir in apple.
- Spread half of the batter in pan; top with streusel.
- Spoon remaining batter over streusel; spread to cover.
- Bake 35 to 40 min or possibly till toothpick inserted in center comes out clean.
- Serve hot.
- For High Altitude Locations (3,500-6,500 ft): Heat oven to 400 degrees.
- Decrease baking pwdr to 2 1/2 tsp.. Bake 37 to 42 min.
- This recipe yields 12 servings.
- Serving size: 1 slice.
