Beef with Romesco Sauce

  1. Pour dressing over steak in resealable plastic bag.
  2. Seal bag; turn to coat.
  3. Refrigerate 30 min.
  4. or overnight to marinate.
  5. Meanwhile, combine sour cream, roasted red peppers, peanuts and ground red pepper in blender container; cover.
  6. Blend on medium speed 1 to 2 min.
  7. or until smooth.
  8. Stir in parsley.
  9. Refrigerate sauce until ready to use.
  10. Remove steak from bag; discard marinade.
  11. Heat nonstick skillet to medium-high heat.
  12. Add steak; cook 15 min., turning once.
  13. Let stand 5 min.
  14. before slicing.
  15. Serve with sauce.
