One BIG Empanada
- 1 lb ground beef
- 1/4 cup onion, chopped
- 1 envelope taco seasoning or I use 1/2 c. Taco sauce, 1/2 teaspoon cumin, 1 teaspoon chili powder
- 1/4 can refried beans
- 2 cup Mexican shredded cheese
- 1 15 oz. package ready to use refrigerated pie crust(2 crusts)
- preheat oven to 425.
- cook hamburger and onion in skillet until no longer pink.
- add taco seasoning or the other ingredients.
- Dont use both!
- spread out one pie crust on pizza pan.
- top with refried beans.
- spread to about 1 inch away from edge
- next add meat mixture.
- next add the cheese.
- then top with other pie crust.
- Press edges of pie crust together with a fork all the way around
- bake for 25 minutes or until golden brown
