Chorizo Ragu With Spiralized Mexican Squash

  1. Heat a skillet over medium-high heat. Crumble sausage into skillet; add the onions and cilantro. Cook and stir until evenly browned, 6 to 8 minutes. Add diced tomatoes and crushed red peppers to the chorizo mixture, stirring until heated throughout.
  2. Heat olive oil in a separate skillet over medium-high heat. Add squash noodles; cook and stir 2 minutes. Add garlic and cook 2 to 3 more minutes.
  3. Transfer squash noodles to plates and top with the chorizo mixture.
