Ginger Pear Preserves

  1. Combine first 4 ingredients in a large saucepan.
  2. Stir in sugar and
  3. water; bring to a boil.
  4. Reduce heat, and simmer 15 minutes.
  5. Remove from heat; cover and let stand 12 hours (do not refrigerate).
  6. Bring to a boil, uncovered, over high heat.
  7. Reduce heat, and simmer 1 hour and 15 minutes or until thick, stirring occasionally.
  8. ladle into prepared jars leaving a 1/4" headspace.
  9. Process jars in a
  10. boiling water bath for 10 minutes.
  11. Adjust time according to your altitude.
