sig's Banana ,Chocolate-Walnut Loaf with Banana Cream Cheese Frosting
- 200 grams soft unsalted butter ,plus a little extra to grease tin
- 350 grams to 400 grams over ripe bananas
- 175 grams light brown sugar
- 2 eggs, medium
- 180 grams plain flour
- 1 1/4 tsp bicarbonate of soda
- 75 grams chocolate chips( min 53% cocoa)
- 75 grams chopped walnuts
- 100 grams unsalted butter
- 100 grams creme cheese
- 300 grams icing sugar
- 3/4 of banana mashed
- Preheat oven to 174C/gas 4
- Place butter ,sugar and cinnamom in bowl, blend until creamy
- Add the eggs one after the other ,stir in
- Mash bananas add to.mixture, combine well add chocolate then add walnut
- Sift flower add bicarbonate of soda ,mix into banana dough
- Grease loaftin add micture to tin
- bake for about 40 minutes or until.skewer comes out clean
- place creamcheese in.bowl, add butter and icing sugar cream.together until pale and fluffy add banana and chill.
- when cake has cooled,spread icing over top
