Scallops With Apples and Pea Pods
- 3 small apples, thinly sliced
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 3 ounces snow peas, trimmed
- 2 tablespoons vegetable oil
- 12 ounces scallops
- 14 cup apple cider
- 2 teaspoons cornstarch
- 1 tablespoon soy sauce
- salt and pepper
- Stir fry apples, onions, bell pepper and pea pods in 1 tablespoon oil over medium high heat until crisp-tender; about 3 minutes.
- Remove from pan.
- Stir fry scallops in wok, in remaining oil until cooked and opaque, about 4 minutes.
- Stir in combined cider, cornstarch and soy sauce and cook until mixture boils and thickens, 1-2 minutes.
- Stir in apple mixture; heat to boiling.
- Season to taste with salt and pepper.
