Chicken Cacciatore Recipe

  1. Preheat oven to 400 degrees.
  2. Prepare a large casserole with vegetable pan-coating.
  3. Wipe chicken pcs with damp cloth.
  4. Heat vegetable oil in large frying pan.
  5. Brown chicken pcs on both sides; transfer to casserole.
  6. Cook onion and pepper strips in frying pan for 3-4 min, stirring frequently.
  7. Combine tomatoes with all other ingredients and mix well; add in to onion and green pepper.
  8. Bring to a boil.
  9. Pour proportionately on top of chicken.
  10. Bake 30 min.
  11. Turn chicken over and baste with sauce; bake 20-30 min more, till chicken is tender.
  12. Makes 4 servings.
  13. 1 serving = 1/2 breast and wing or possibly 1 leg and 1 thigh, plus 1/2 c. tomato mix.
  14. Food Exchange per serving: 4 Lean Meats and 2 Vegetables.
