Pikadillo And Cornbread Wedges

  1. Prepare cornbread; spray 8 x 1 1/2-inch nonstick round cake pan with cooking spray.
  2. Stir together cornmeal, flour and baking powder in a medium bowl until well mixed.
  3. Lightly beat egg whites in a small bowl.
  4. Stir in buttermilk and oil until well combined. Pour the liquid ingredients all at once into the dry ingredients. Stir the mixture briskly with a fork until all the ingredients are just evenly moistened; do not overstir.
  5. The batter will be lumpy. Turn into prepared pan.
  6. Bake at 400u0b0 for 18 to 20 minutes or until wooden pick inserted comes out clean.
  7. Turn out onto wire to cool slightly.
