Zucchini Marmalade

  1. Grate zucchini; do not peel.
  2. Measure 4 cups into large saucepan.
  3. Add orange sections.
  4. Remove rind in quarters from the lemon.
  5. Using a spoon scrape off and discard about half of the white pith.
  6. Slice rind very fine.
  7. Section lemon and chop.
  8. Add pulp and rind to zucchini-orange mixture.
  9. Add lemon juice.
  10. Add sugar to fruit and mix well.
  11. Place saucepan over high heat.
  12. Bring to a full rolling boil and boil hard 1 min, stirring constantly.
  13. Remove from heat.
  14. Immediately stir in CERTO Liquid Fruit Pectin.
  15. Stir and skim foam for 7 minutes to prvent floating fruit.
  16. Pour quickly into warm, sterilized jars filling up to 1/4 inch from rim.
  17. Seal while hot with sterilized 2-piece lids with new centres.
