Something Special Spanish Chicken
- 4 pieces Boneless Chicken Breast
- 4 Tablespoons Taco Seasoning
- 1 cup Chunky Salsa
- 10 Tablespoons Fat Free Ranch Dressing
- 1 whole Lime (juice Only)
- 6 ounces, weight Shredded Cheese
- 15 ounces, weight Canned Black Beans
- 1 package (about 6-8 Oz. Package) Spanish Rice, Or Brown Rice If Preferred
- Black Olives
- Green Onion

- Place chicken breast and taco seasoning in a Ziploc bag, smooshing around to coat chicken.
- 2.
- Spray skillet with nonstick cooking spray and heat to medium heat.
- 3.
- Brown chicken on both sides.
- 4.
- In a bowl, combine salsa, ranch dressing, and lime juice.
- 5.
- Pour salsa mixture over chicken and top with shredded cheese.
- 6.
- Reduce heat, cover skillet, and simmer for approximately 10 minutes.
- 7.
- Layer prepared (cooked) Spanish rice (or brown rice if you want to go that route), black beans, and chicken breast.
- Spoon additional sauce over rice, beans, and chicken.
- 8.
- Garnish with black olives and green onions, or whatever you little heart desires!
- Enjoy!
