Lemon lassi recipe
- 240 ml (8.4fl oz) good-quality fresh plain yoghurt
- 200 ml (7fl oz) water
- 3 tbsp sugar, or to taste
- 2 3 tsp lemon juice, or to taste
- 1.5 small lemons, finely grated zest only
- 1 cup ice cubes, to serve
- 2 sprigs of fresh mint
- Blend together the yoghurt, water, sugar, lemon juice and zest until light and frothy.
- Adjust the sugar and lemon to taste.
- Pour into tall glasses filled with ice cubes and the mint and serve.
