Perfect meringue
- 200 grams castor sugar
- 4 egg whites. seperate.
- 1 dash lemon juice
- Preheat oven to 140F celsius.
- line a baking tray with baking paper
- add one egg white to castor sugar.
- whisk until light and fluffy.
- add another egg white.
- whisk again
- add last 2 egg whites.
- whisk
- dollop the meringue into the baking paper, spread over pan with spatula.
- sides slightly higher than middle
- bake for one hour to one and a half hours.
- it is ready when it is slightly golden on top
- use to make pavlova
