Perfect meringue

  1. Preheat oven to 140F celsius.
  2. line a baking tray with baking paper
  3. add one egg white to castor sugar.
  4. whisk until light and fluffy.
  5. add another egg white.
  6. whisk again
  7. add last 2 egg whites.
  8. whisk
  9. dollop the meringue into the baking paper, spread over pan with spatula.
  10. sides slightly higher than middle
  11. bake for one hour to one and a half hours.
  12. it is ready when it is slightly golden on top
  13. use to make pavlova
