Eggnog Coffee Cake Muffins #1

  1. Preheat oven to 350F
  2. Prepare 12 regular sized muffin cups with spray or paper liners.
  3. STREUSSEL: combine all and cut with knife or fork until you get coarse crumbs.
  4. Set aside.
  5. MUFFIN BATTER:
  6. In a large bowl wisk together all dry ingredients.
  7. Set aside.
  8. In another bowl wisk together all wet ingredients.
  9. Combine wet into dry and stir until just combined.
  10. Do not overmix.
  11. ASSEMBLY:
  12. Fill each prepared muffin cup to 1/3 full.
  13. Top with about 1 tbl.
  14. Streussel filling mix.
  15. Top with remaining batter equally among muffin cups.
  16. Top with another tablespoon of streussel mix.
  17. Bake 20-25 minutes or until toothpick comes out clean.
  18. Let muffins cool for 5-10 minutes then transfer to wire rack for cooling.
  19. Serve and enjoy!
  20. Makes about 12 regular sized muffins.
