Babe's Pecan Pie
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 cup corn syrup, dark
- 1 cup pecans coarsely chopped
- 3 large eggs
- 1 each pie shell (9 inch) unbaked
- 2 tablespoons butter melted
- Combine sugar and corn syrup in a small saucepan; bring to a boil.
- Beat eggs at medium speed til blended.
- Gradually add hot sugar mixture to eggs, beating constantly.
- Stir in butter, vanilla and pecans.
- Pour mixture into pie shell; bake at 350F (180C) F for 40 minutes.
