Chicken & Pistachio Filled Stuffing Cups
- 6 cups Stuffing Mix (your Preference)
- 1 whole Egg
- 1- 1/4 cup Water
- 1/2 pounds Ground Chicken
- 1 Tablespoon Dry Ranch Mix
- 1 whole Green Onion, Chopped
- 13 cups Pistachios, Coarsely Chopped
- 1/4 cups Asiago Cheese, Shredded
- Mix together the stuffing, egg and water, and allow time for the stuffing to absorb the liquid.
- Grease the muffin pan and fill halfway with stuffing.
- Then press the center of the stuffing down in each cup to form a cup for filling.
- Mix the remaining ingredients together (except the cheese) to make the filling, and fill each stuffing cup to the top.
- Top with a pinch of asiago cheese.
- Bake at 350 degrees F for 20 to 25 minutes until browned and slightly crisped.
