Maria's Pickled Shrimp

  1. Boil shrimp until just cooked and still tender.
  2. Cool to room temperature.
  3. Meanwhile, bring to a boil vinegar, sugar, 1/4 cup water and spices.
  4. Simmer and reduce to 3/4.
  5. Cool to room temperature.
  6. Make an emulsion of the vinegar solution and the olive oil.
  7. Add vegetables and shrimp and marinate refrigerated overnight.
  8. Will keep for at least one week.
