Honey Sweet Potato Cookies Recipe

• 1/2 c. shortening
• 1 1/4 c. honey, divided
• 2 Large eggs
• 1 1/2 c. cooked, mashed sweet potatoes
• 2 1/2 c. flour
• 1 teaspoon salt
• 2 teaspoon cinnamon
• 1 teaspoon nutmeg
• 1 1/2 c. raisins
• 1 1/2 c. minced pecans
• 4 teaspoon baking pwdr

1. Cream shortening and 3/4 c. honey.
2. Add in Large eggs.
3. Mix sweet potatoes and remaining honey together, then combine with creamed mix.
4. Blend in sifted dry ingredients.
5. Mix in raisins and pecans.
6. Refrigeratefor 30 min.
7. Drop by tablespoonful onto a greased cookie sheet.
8. Bake at 375 degrees for 15-20 min.
9. Frost with vanilla frosting when cold.
10. Makes 6 dozen cookies.
