Honey Sweet Potato Cookies Recipe
- 1/2 c. shortening
- 1 1/4 c. honey, divided
- 2 Large eggs
- 1 1/2 c. cooked, mashed sweet potatoes
- 2 1/2 c. flour
- 1 teaspoon salt
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 1/2 c. raisins
- 1 1/2 c. minced pecans
- 4 teaspoon baking pwdr
- Cream shortening and 3/4 c. honey.
- Add in Large eggs.
- Mix sweet potatoes and remaining honey together, then combine with creamed mix.
- Blend in sifted dry ingredients.
- Mix in raisins and pecans.
- Refrigeratefor 30 min.
- Drop by tablespoonful onto a greased cookie sheet.
- Bake at 375 degrees for 15-20 min.
- Frost with vanilla frosting when cold.
- Makes 6 dozen cookies.
