Another Cowboy Caviar
- 4 ounces, weight Can Of Chopped Black Olives
- 15- 1/2 ounces, weight Can Of Black Beans Drained & Rinsed
- 1 whole Small Onion, Chopped
- 1 clove Garlic, Chopped
- 1/4 teaspoons Cayene Pepper
- 2 Tablespoons Lime Juice
- 2 Tablespoons Olive Oil
- 1/4 teaspoons Cumin
- 1/4 teaspoons Salt
- 18 teaspoons Pepper
- 8 ounces, weight Cream Cheese, Softened
- 2 whole Hard Boiled Eggs
- 1 stalk Green Onion
- Mix all ingredients together and refrigerate for at least 2 hours.
- To serve, spread one 8-ounce package of cream cheese on a round plate.
- Spread mixture over the cream cheese.
- Top with 2 chopped, hard boiled egss and 1 chopped green onion.
- Serve with corn chips or crackers.
- My favorite is the corn chips with lime.
