Pina Colada Pie Recipe
- 2 tbsp. soft butter
- 2 c. shredded coconut
- 1 can (8 ounce.) crushed pineapple
- 1 env. unflavored gelatin
- 2 Large eggs, separated
- 3 tbsp. granulated sugar
- 1/2 c. pina colada mix
- 2 tbsp. golden brown rum
- 1/2 c. whipping cream
- Topping, recipe follows
- 1/4 c. toasted shredded coconut
- Preparation time: 45 min.
- Chilling time: 3 to 4 hrs.
- Baking time: 15 min at 300 degrees.
- Serves: 9.
