Pina Colada Pie Recipe

• 2 tbsp. soft butter
• 2 c. shredded coconut
• 1 can (8 ounce.) crushed pineapple
• 1 env. unflavored gelatin
• 2 Large eggs, separated
• 3 tbsp. granulated sugar
• 1/2 c. pina colada mix
• 2 tbsp. golden brown rum
• 1/2 c. whipping cream
• Topping, recipe follows
• 1/4 c. toasted shredded coconut

1. Preparation time: 45 min.
2. Chilling time: 3 to 4 hrs.
3. Baking time: 15 min at 300 degrees.
4. Serves: 9.
5. (One 9-inch pie.)
