Alligator Stew Recipe
- 1/2 c. vegetable oil
- 1 quart cut up alligator meat
- 1/2 c. minced onion
- 1/2 c. minced bell pepper
- 1/2 c. minced celery
- 2 Tbsp. chopped parsley
- 1 x 10-oz can tomatoes with green chilies salt and pepper
- 1 c. cooked rice
- Put vegetable oil and alligator meat in heavy 4 qt cooking pot.
- Add in minced vegetables, parsley and tomatoes.
- Season with salt and pepper.
- Cover pot and cook over medium heat for one hour.
- Serve over warm cooked rice.
- Preparation Time: 1 hour, 15 min
