LAMINGTONS

  1. For the lamingtons: Cream margarine and sugar till light and fluffy.
  2. Add eggs one at a time and beat well.
  3. Dissolve bicarb and cream of tartar in cold milk.
  4. Add to the mixture and fold in sifted flour and salt.
  5. Spread mixture in a large baking pan.
  6. Bake in a preheated oven at 180C for 45 minutes.
  7. When thoroughly cool cut into squares.
  8. For the Syrup: Boil sugar, water and cocoa together.
  9. Cool syrup.
  10. Dip cake squares into syrup and then coat on all sides with coconut.
