Fluffy Omelette with Chinese Chives with Mayonnaise

  1. Cut the Chinese chives into about 5 cm lengths.
  2. Beat the eggs, and add the mayonnaise.
  3. Heat vegetable oil in a frying pan, and add the Chinese chives.
  4. Cook until wilted, and season with salt and pepper.
  5. Add the beaten eggs, and stir quickly.
  6. When the eggs are cooked, it is done.
