Chicken and Haloumi Salad

  1. SPRAY the tenderloins with oil and pan fry or chargrill for 6-8 minutes until golden and cooked through.
  2. Remove from the pan, cut into thick diagonal slices and keep warm.
  3. SPRAY the Haloumi with oil and cook in the same pan for 3-5 minutes until golden.
  4. Remove.
  5. ARRANGE the radicchio on serving plates, top with rocket, spinach and spring onions.
  6. Top with the cooked chicken and Haloumi then drizzle with the dressing.
  7. Serve immediately
