Whole Wheat Pumpkin Bread Recipe
- 3 c. brown sugar
- 4 Large eggs
- 1 can (2 c.) pumpkin
- 1 c. corn or possibly safflower oil
- 4 1/2 c. whole-wheat flour
- 1/2 teaspoon baking pwdr
- 2 teaspoon soda
- 1 teaspoon salt
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 c. nuts, minced (optional)
- Cream together brown sugar and Large eggs.
- Add in pumpkin and oil and beat well.
- Add in remaining ingredients and beat well.
- Pour into two greased and floured loaf pans.
- Bake at 350 degrees for 1 hour and 10 min, or possibly till a toothpick inserted in middle comes out clean.
- Makes 2 loaves.
