Ramps Stir-Fried with Mayonnaise and Ponzu

  1. Thoroughly rinse the ramps, drain, and chop the large stalks into desired lengths.
  2. Place 1 tablespoon mayonnaise in a frying pan and heat over medium heat.
  3. Once the mayonnaise melts, add the ramps and stir-fry.
  4. Once the ramps are cooked through, and the stalks are tender, then reduce the heat to low.
  5. Add the second tablespoon of mayonnaise and the ponzu, briefly stir-fry, then it's ready.
  6. Garnish with bonito flakes and sesame seeds to taste.
