Ramps Stir-Fried with Mayonnaise and Ponzu
- 4 bunchs Ramps (or alpine leek)
- 1 tbsp Mayonnaise (1st addition)
- 1 tbsp Mayonnaise (2nd addition)
- 1 tbsp Ponzu
- 1 Bonito flakes and white sesame seeds
- Thoroughly rinse the ramps, drain, and chop the large stalks into desired lengths.
- Place 1 tablespoon mayonnaise in a frying pan and heat over medium heat.
- Once the mayonnaise melts, add the ramps and stir-fry.
- Once the ramps are cooked through, and the stalks are tender, then reduce the heat to low.
- Add the second tablespoon of mayonnaise and the ponzu, briefly stir-fry, then it's ready.
- Garnish with bonito flakes and sesame seeds to taste.
