Apple Meringue Recipe
- 2 c. Apple, stewed, warm
- 3 x Egg, separated
- 1/2 tsp Nutmeg
- 1 Tbsp. Lemon juice
- 1 tsp Vanilla
- 1/4 c. Sugar
- 2 Tbsp. Butter
- 1/2 tsp Cinnamon
- 1/4 c. Powdered sugar
- Combine the stewed apples, sugar, butter, lemon juice and spices and mix well.
- Beat the egg yolks and add in to the apple mix and beat till light.
- Pour into a buttered baking dish and bake at 400-F about 15 min.
- Remove from oven and cover with a meringue made by beating the egg whites stiff, adding to them the powdered sugar and vanilla after partially beaten.
- Return to oven and bake at 325-F to brown the meringue.
