Black bean and chicken fiesta soup

  1. In a pot heat 2 tbsp of oil add all chicken let simmer add spices and 1can of broth.
  2. Simmer on medium heat covered with lid.
  3. In a stock pot add 2 tbsp oil and chopped onion cook until tender
  4. Open all cans add to stock pot.
  5. Add taco seasoning packs and stir simmer on low to medium heat.
  6. Cube your chicken breast add to stock pot.
  7. Be careful you may need to let chicken cool first.
  8. Pour broth from chicken into stock pot stir add more spices if needed.
  9. Add second can of broth and bouillon cubes if needed.
  10. Taste your soup to see what's missing.
  11. Simmer on low for 1 hour stirring frequently.
  12. Serve hot and enjoy!
  13. Great in the winter months.
  14. I topped my soup with fresh cilantro, cheese, & sour cream delicious!
  15. I also made some cheese quesadillas to make this more a meal yum!
  16. Other toppings suggestions: avocado, jalapenos, green onions, or black olives.
