- 400 grams Asian sweet potato (1 large)
- 40 grams Sugar
- 100 ml Heavy cream
- 1 Egg yolk
- 1 dash Salt
- Slice the potato, soak briefly in water then microwave until soft.
- Add the sugar, heavy cream and salt, and mash the potatoes.
- Using an ice cream scoop, take one scoop of the potato paste and shape.
- Repeat the process.
