Chargrilled Lamb with Warm Asparagus and Feta Salad
- 12 lamb cutlets, frenched
- 1 cup KRAFT Italian Dressing
- 1 tablespoon oil
- 2 cloves garlic, crushed
- 1 red onion, sliced
- 1 yellow capsicum, cut into 2cm squares Target 1 pkg For $2.99 thru 02/06
- 1 red capsicum, cut into 2cm strips Target 1 pkg For $2.99 thru 02/06
- 2 bunches asparagus, blanched
- 180g Australian feta, cubed or crumbled
- 1/2 cup roughly shredded basil
- black pepper
- 1/2 cup pitted black olives
- Combine the cutlets with 2/3 cup of the dressing and refrigerate for 2 hours or overnight.
- BBQ the cutlets until cooked as desired, keep warm.
- Heat the oil and saute the garlic, onion, capsicum for 2 minutes, stir in the asparagus and cook a further 2 minutes.
- Toss in the feta, basil, pepper, olives and remaining dressing.
- Spoon the salad onto serving plates, top with the cutlets and serve immediately.
