Chargrilled Lamb with Warm Asparagus and Feta Salad

  1. Combine the cutlets with 2/3 cup of the dressing and refrigerate for 2 hours or overnight.
  2. BBQ the cutlets until cooked as desired, keep warm.
  3. Heat the oil and saute the garlic, onion, capsicum for 2 minutes, stir in the asparagus and cook a further 2 minutes.
  4. Toss in the feta, basil, pepper, olives and remaining dressing.
  5. Spoon the salad onto serving plates, top with the cutlets and serve immediately.
