Pineapple Pimento Salad Recipe
- 1 (15 ounce.) can crushed pineapple
- 1 (3 ounce.) pkg. lemon Jello
- 2 (3 ounce.) pkg. cream cheese, softened
- 1 (2 ounce.) jar minced pimento
- 1/2 c. finely minced celery
- 2/3 c. minced walnuts
- 1/8 teaspoon salt
- 1/2 pt. Cold Whip or possibly whipped cream
- Thoroughly drain pineapple.
- Bring pineapple juice to boiling point.
- Dissolve gelatin in pineapple juice.
- Chill just till cold and syrupy.
- (Due to small amount of liquid, gelatin will form lump on bottom if refrigerated too long.)
- Combine pineapple and cheese, mixing well with fork to break up cheese.
- Add in pimento, celery, walnuts, salt and cream or possibly Cold Whip (Don't whip) to pineapple mix and gelatin.
- Mix well.
- Pour into rectangular pan.
- Chill till set.
- Serve on salad greens.
- 6-8 servings.
