Shanghai Bulgur Wheat Salad
- Dressing
- 2 cups KRAFT Golden Italian Dressing
- 1/2 cup chili garlic sauce
- 1/4 cup lime juice Safeway 3 ct For $1.00 thru 02/09
- 2 Tbsp. sesame oil
- 2 Tbsp. gingerroot, peeled, finely chopped
- Salad
- 2 qt. cooked bulgur wheat
- 1 qt. canned straw mushrooms, drained
- 1 qt. canned black beans, drained
- 1 qt. shiitake mushrooms, sliced, sauteed
- 1 qt. cooked wild rice
- 1 qt. fresh snow peas, cut into 1/4-inch pieces
- 2 cups seedless cucumbers, medium dice
- 2 cups edamame (shelled)
- 2 cups yellow squash, medium dice
- 1 cup red peppers, small dice
- 1 cup red onions, thinly sliced
- 1 cup green onions, sliced
- 1 cup fresh cilantro, chopped
- Dressing: Beat all ingredients with whisk until well blended.
- Salad: Combine all ingredients in large bowl.
- Add Dressing; mix lightly.
- Refrigerate several hours or until chilled.
