Summer Light Chicken Salad
- 13 cup vegetable oil
- 13 cup lemon juice
- 12 teaspoon salt
- 14 teaspoon nutmeg
- 12 teaspoon fresh garlic, minced
- 2 12 cups cooked chicken, cubed
- 1 cup red seedless grapes, halved
- 1 cup celery, sliced
- 14 cup green onion, sliced
- 4 cups lettuce leaves, shredded
- in a jar with lid combine all dressing ingredients, shake to mix.
- in large bowl combine all salad ingredients except lettuce.
- toss salad with half of dressing, cover and refrigerate at least 1 hour.
- place lettuce on serving platter, top with salad.
- drizzle remaining dressing over salad and lettuce.
