Grilled Potato Salad
- 1 (1 7/8 ounce) envelope onion soup mix
- 13 cup olive oil or 13 cup vegetable oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic, chopped
- 4 medium red potatoes, diced
- 1 medium green pepper, diced
- 1 medium red pepper, diced
- 1 teaspoon dried basil
- 18 teaspoon black pepper
- Blend the onion soup mix, oil, vinegar, garlic, basil and pepper in a large bowl.
- Stir in the potatoes and peppers.
- Grease a 30x18-inch piece of heavy-duty aluminum foil on aluminum pan.
- Top with the potato mixture.
- Grill for about 40 minutes until the potatoes are tender, stirring occasionally.
