Orange Cranberry Breakfast Bread

  1. Heat oven to 350F.
  2. Generously butter a 9x5-inch loaf pan.
  3. In a large bowl combine flour, baking powder, and salt.
  4. Whisk gently to blend dry ingredients.
  5. In the bowl of an electric mixer combine butter and sugar.
  6. Beat at high speed until light and fluffy.
  7. Beat in eggs, one at a time.
  8. With mixer on low, add dry ingredients alternating with the orange juice.
  9. Beat until well moistened.
  10. Stir in the corn flakes, vanilla, and dried cranberries.
  11. Pour batter into prepared pan.
  12. Bake 50 minutes to 1 hour, until a tooth pick inserted in the center comes out clean.
  13. Cool on a wire rack 10 minutes before turning out to cool completely.
