Black Forest Chocolate Fudge Cake

  1. Heat oven to 350F (180C).
  2. Coat a 3- to 4-quart bundt or other tube pan with vegetable cooking spray.
  3. Into large bowl sift flour, cocoa, baking pow der and salt; mix in brown sugar.
  4. In another bowl whisk eggs with prune puree, milk and vanilla.
  5. Pour boiling water into measuring cup, stir in espresso powder and baking soda.
  6. Stir egg and water mixtures into flour mixture; mix just until blen ded.
  7. Pour half the batter into pan; sprinkle cherries and walnuts evenly over batter.
  8. Pour in remaining batter.
  9. Bake in center of oven about 45 minutes until pick inserted into cake comes out clean.
  10. Cool in pan on rack 15 minutes, invert onto rack, remove pa n and cool completely.
  11. Dust with powdered sugar; place on serving plate.
  12. Fill cake center with additional cherries and garnish with mint.
