Sugar and Spice Cookies
- 3/4 cup vegetable shortening
- 1 cup sugar
- 1 each eggs
- 1/4 cup molasses
- 2 cups flour, all-purpose
- 1 teaspoon baking soda
- 1 1/2 teaspoons ginger ground
- 1 teaspoon cinnamon ground
- 3/4 teaspoon cloves ground
- 1/2 teaspoon salt
- 2 cups powdered sugar
- 3 tablespoons butter softened
- 1 teaspoon lemon zest grated
- 4 tablespoons lemon juice
- In a mixing bowl, cream shortening and sugar.
- Add egg; mix well.
- Beat in molasses.
- Combine dry ingredients; add to creamed mixture and mix well.
- Drop by rounded teaspoonfuls onto greased baking sheets.
- Bake at 350F (180C) F for 8 to 10 minutes.
- Remove to wire racks; cool.
- For frosting, cream the sugar, butter and lemon peel in a mixing bowl.
- Gradually add lemon juice, beating until frosting reaches desired spreading consistency.
- Frost cookies.
