Curry Flavored Summer Eggplant Stir Fry

  1. Here are instructions on basic eggplant preparation: "How to prep summer eggplants".
  2. Slice the eggplants into thin rounds.
  3. Combine the ingredients.
  4. Heat sesame oil in a frying pan, and stir-fry the eggplants.
  5. Brown both sides!
  6. Add the mixture!

  8. Simmer for a little bit while flipping occasionally!
  9. Serve onto a plate, and pour on the sauce from the pan.
  10. Sprinkle white sesame seeds or green onions on if you like!
