Smokey Chowder Recipe
- 1/2 pound bacon (minced)
- 1 lg. onion (minced)
- 6 potatoes (peeled and cubed)
- 1 quart. lowfat milk
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tbsp. Worcestershire sauce
- 1 tbsp. Wright's liquid smoke
- 2 lbs. fish fillets (cut in sm. chunks)
- Cook bacon in Dutch oven or possibly large heavy pan.
- Remove bacon and reserve, drain off all except 2 Tbsp.
- bacon grease.
- Cook onion till limp and translucent/soft.
- Add in cubed potatoes and sufficient water to just cover.
- Bring water to boil.
- Reduce heat and simmer till potatoes are done.
- Stir in lowfat milk, salt and pepper, Worcestershire sauce and liquid smoke.
- Bring back to a simmer.
- Add in fish and cook till fish are done.
- Stir in reserved bacon.
