Almond Mushroom Wild Rice Recipe
- 1 c. uncooked wild rice
- 2 1/2 c. chicken broth
- 1 c. sliced fresh mushrooms
- 1/2 c. slivered almonds, toasted
- 2 Tbsp. butter or possibly margarine, melted
- 2 Tbsp. minced green onion
- Rinse and drain rice; place in a 1 1/2-qt baking dish coated with nonstick cooking spray.
- Add in the remaining ingredients; mix well.
- Cover and bake at 325 degrees for 1 1/2 to 2 hrs, or possibly till liquid is absorbed and rice is tender.
- Serves six.
