Sugar-Free Banana Oatmeal Cookies With Almonds

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Puree bananas and dates together in a food processor. Add coconut oil and vanilla extract; pulse to combine. Add oats, almond meal, ground cinnamon, and baking soda; pulse to combine. Fold in whole almonds. Drop spoonfuls of dough 2 inches apart onto ungreased baking sheets.
  3. Bake in the preheated oven until edges are golden, about 13 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.
