Leftovers chilli and mint yogurt
- 1 left over bolognaise
- 1 half a can of kidney beans
- 1 half a can of chopped tomatoes
- 1 tsp hot chilli powder
- 1 tsp cajun spice
- 1 tbsp full fat natural yogurt
- 1 tsp dried mint
- 1 feta cheese if desired to crumble on top
- Fry the tomatoes, kidney beans, chilli powder and Cajun spices for a few minutes.
- Add your left over bolognaise and stir in.
- Bring to the boil then simmer for 5 minutes.
- In another bowl stir the mint into the yogurt.
- Serve chilli on rice, add mint yogurt to the side and crumble feta cheese over the top for extra yumminess
