Mom's Low-Fat Chocolate Chip Cookies
- 1 cup prune puree or prepared prune butter
- 3/4 cups sugar
- 3/4 cups brown sugar packed
- 3 each egg whites
- 1 teaspoon vanilla extract
- 2 1/4 cups flour, all-purpose
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups chocolate pieces, or chips
- Preheat oven to 375F (190C).
- Coat baking sheets with vegetable cooking spray; set aside.
- In a large bowl, beat prune puree or prune butter, sugars, egg whites and vanilla to blend thoroughly.
- In a small bowl, mix flour, baking soda, and salt.
- Stir dry ingredients into prune mixture, mix completely.
- Stir in chocolate pieces.
- Drop tablespoonful onto prepared baking sheets; flatten slightly.
- Bake about 10 minutes until lightly browned around the edges.
- Remove to racks to cool completely.
- Makes about 60 cookies.
