Spicy Black Bean Stuffed Butternut Squash

  1. Cut squash in half lengthwise clean out seeds and pulp.
  2. Put face down on a cookie sheet.
  3. Cook in oven set for 350F for 45 minutes to 1 hour.
  4. Heat a skillet with oil or butter over medium hight heat.
  5. Add black bean burgers, Rotel tomatoes and cilantro.
  6. while cooking crumble black bean burgers.
  7. When squash is done scoop out and add to the pan cook till heated through and serve.
